You may create a parameterized model and then want to experiment with different dimensions for that model. If you create a value set then you can experiment and then easily revert the model back to the dimensions you started with. Here is a small example showing how this flow works.

You have created a value set and assigned its variables with the values you want to experiment with. See “Creating a Value Set” for more information. Here you switch to the second value set.
